On this occasion, Mr. Tariq, Chef said, In this food festival we will use special Kashmiri spices like hing (asafoetida), dried ginger and fennel so that we can enjoy our cuisine with various Kashmiri flavored dishes. Treat your inner gourmand with traditional Kashmiri signatures including much-loved dum aloo (whole potatoes boiled, fried and then finished in a sealed dum), dishes made from haak – the leafy evergreen favourite of the region, the delectable soont vangun – a preparation of green apples and brinjals and of courses lotus stem or nadru made in a variety of styles – cooked with either yoghurt, spinach or dal. For the non-vegetarian palate shabhdegh – turnips and mutton cooked in gravy of turmeric; gad nadru – a spicy curry of fish and lotus stem and kaliyan – an aromatic preparation of mutton cubes in a fennel-flavoured curry and much more.
